For Chips or Wedges

Takes up to 1 hour total

Serves 2 (realistically) or a few people as a side

Serve with fajitas, as a side, or on their own dipped in aioli!

Drink with literally anything!

You will need...

1 x For Chips or Wedges Spice Mix

2 - 3 x large potatoes

Dash of oil


Veggie and vegan friendly!


Method

  1. Preheat the oven to 200C/gas 8.

  2. Chop the potatoes into wedges or chips (don't peel them!) and add to a pan of boiling water with a pinch of salt. Cook until just tender (but not cooked through), about 8 minutes.

  3. Drain the potatoes and return them to the pan, with a dash of oil and the For Chips or Wedges Spice Mix. Shake the pan to rough up the edges of the potatoes, and coat everything thoroughly. Don't worry if some fall apart, they'll just be extra crispy.

  4. Bake in the oven for 30 minutes, then shake the tray or turn the wedges over.

  5. Bake for a further 15 minutes, or until cooked to your desired crispiness.
