Chilli Con/Sin Carne

Takes up to 1 hour total

Serves 3 hungry people/4 modest portions

Serve with boiled rice, grated cheddar cheese, garlic bread and salad.

Drink with red wine.

You will need...

1 x Chilli Con/Sin Carne Spice Mix

500g pack lean minced beef

1 x white onion, chopped finely

2 x garlic cloves, crushed

1 x red pepper, deseeded and cut into chunks

8 x white mushrooms, halved and sliced

100ml red wine (optional)

1 x tinned red kidney beans, drained

1 x tinned chopped tomatoes

2 tblsp tomato puree


For a veggie version...

-Replace minced beef with Quorn or other vegetarian mince

- Replace minced beef with cooked red lentils, from a pouch or tin

Method

  1. Heat a generous dash of olive oil in a pan. Add the white onion and cook until soft, about 5 minutes. Add the beef mince and cook until the mince is well browned, about 5 minutes. Add the mushrooms and red pepper and cook for a further 2 minutes.

  2. Add the Chilli Con/Sin Carne Spice Mix, the crushed garlic cloves, and the red wine, if using. Stir well and simmer for 2 minutes.

  3. Add the kidney beans, tinned tomatoes and tomato puree to the pan and stir well to mix. Rinse the tomato can with a dash of water, add to the pan and bring to a simmer.

  4. Simmer gently for 30 minutes with a lid on (or longer if you have longer), then remove the lid and simmer for a further 15 minutes, or until the sauce is thick and rich, stirring occasionally.
